Honey and Vanilla Bean Chia Pudding

I have tried many methods of cooking chia seed puddings and finally discovered a perfect ratio of liquid to the seeds.


In my version of the pudding, the citrus flavor from orange and passion fruit makes a perfect balance to the sweet notes of honey and vanilla. Of course, you can add other fruits, berries, granola or nuts in general, everything you have at hand. You can serve this pudding for breakfast or as a dessert. Mix it in the evening and let it sit in the fridge for a few hours or overnight, and just add the fruit in the morning.



Chia seeds are rich in iron, calcium, magnesium, phosphorus, protein and fiber, and represent an excellent source of omega-3 fatty acids, which are necessary to our body throughout its life. A high level of antioxidants helps to detoxify the body. Moreover, they have the unique property to bind water. The seeds absorb liquid and get bigger in volume. This property makes them an excellent substitute for eggs in vegan baking.
